I am a die-hard chocolate lover.
I’m the kind of person who wants to have something chocolate on my day off, even if it doesn’t fall on the weekend. And then on the weekend, when I have to work. Weekends when I don’t have to work. And my birthday. And days I just wish were my birthday.
But, unfortunately, I can’t have a brownie sundae every day. Or can I?
This ultra dark chocolate single-serve microwave mug brownie is so gooey with melted chocolate, it‘s almost like eating a lava cake. Now be warned: it’s really dark chocolate. So for the faint of heart — in other words, you’ve never eaten a 100% cocoa unsweetened baking bar for fun (told you I really like chocolate!) feel free to switch the cocoa powder to regular.

Yields: 1 single serving mug brownie
- 2 Tablespoons coconut oil
- 2 Tablespoons oat flour*
- 2 Tablespoons dark cocoa, or regular unsweetened cocoa powder
- 2 Tablespoons natural sweetener, cup-for-cup to sugar such as Swerve**
- 2 Tablespoons milk, or preferred nut milk (Can also use 1 Tbsp plain Greek yogurt + 1 Tbsp milk of choice)
- Splash vanilla extract
- 1–2 Tablespoons sugar-free chocolate chips (my favorites are Lily’s or Bake Believe because they use Stevia)
Scoop the coconut oil into a mug. If the oil has been at room temperature, it’s probably fine, but if not ready to stir, soften for 8 seconds at 50% power in the microwave. Add oat flour, dark cocoa, sweetener, milk or nut milk, and vanilla, stirring gently after each addition.
Microwave on High 35–40 seconds, or to taste. The less time you microwave it, the more lava cake-y the mug brownie will be. When it’s ALMOST solid (but just barely), sprinkle the sugar-free chocolate chips on top. Microwave 5–10 more seconds.
Great topped with no sugar added ice cream!
*If making this gluten free, be sure the brand of oat flour is certified gluten free.
**Because many natural sweeteners have their own sugar:sweetener replacement ratio, if using a different type of natural sweetener than the one listed, follow the instructions on the package as if substituting the sweetener for 2 Tablespoons of sugar.
